Blueberries are in season, so this is the perfect time to make this easy and delicious recipe!
Blueberry Muffin Mug Cake
1/4 cup flour
2 tbsp granulated sugar
1/8 tsp baking powder
1/16 tsp baking soda
3 tbsp milk
1 tbsp vegetable oil
small handful of fresh blueberries
2 tbsp powdered sugar
1/2 tsp water
Recommended mug size at least 12 oz.
Combine all muffin ingredients except blueberries into a small bowl, then add blueberries and stir in lightly.
Combine topping ingredients into a separate bowl, and set aside.
Transfer muffin mixture into a microwave-safe mug, then cook mug in microwave for approximately one minute.
Drizzle topping over muffin mix while still warm. Let cool slightly before eating.
